This is so easy and so good I don't know why I didn't start doing this a long time ago! Pick your favorite veggies -- zucchini, carrots, mushrooms, eggplant, onions, etc. -- slice them up kinda thickly, toss with olive oil, salt, and pepper, fresh cloves of garlic and/or your favorite herbs, set your oven to its highest temperature, put the veggies in a shallow pan, put the pan in the broiler, and roast until they're brown and toasty around the edges (10-20 minutes).

Yumm!!!

Mmmm I LOVE roasted veggies.
This is a dish that I do quite often.
I usually accompany it with either boiled or roasted potatoes or rice and a I also love to do a roasted acorn squash.

You can use any squash but acorn is my favorite, just put a drop of veggie butter or regular butter in the center of each quarter of the squash, lightly dust it with brown sugar or a spoonfull of honey and place on a baking sheet and roast at whatever temprature you like really, I usually use 375.
Its really wonderfull.

Thank you, Snowdragon. I love squash, too. Lately, butternut has been my favorite. You can take a vegetable peeler and slice it into really thin curls. Toss them with olive oil and pine nuts, and roast until the edges of the squash and the pine nuts turn a lovely, toasty brown.
