I made pesto a long time ago, but I can't find the recipe. Do any of you know how? It's relatively easy I think.------------------

Approximately 2 cups of fresh basil leaves, some (1/2 cup or so) olive oil, pine nuts, fresh garlic, and salt & pepper in a blender. That's all there is to it! If you eat dairy, you can add parmesan cheese, too. Some people make it with spinach instead of basil, or some combo of the two. happy eating... If you're vegan and want the pesto to taste a little richer, you can add a tablespoon of white miso to the batch. It adds that yummy parmesan flavor. |

I haven't tried the miso. I'll have to try that. Usually, I just add a whole lot of pine nuts, and that seems to give it the richness and texture that the cheese would. I've seen recipes with walnuts, too, and I guess that would do sort of the same thing, but I haven't tried that either. | |
