The recipe listed is vegetarian, but could be adapted for vegans by replacing egg whites with soy product. Good options are using molasses or adding raisins at the final stage. Apples are not the only good fruit to use.
1 C. Oat Flour or Oat Fiber (I grind oats and oat bran in blender, as it is cheaper)
8-10 Packets Sweetner (I use splenda, some may prefer using honey and stevia instead)
1 C. Unsweetened Applesauce (I puree apples in blender)
1 tsp. Baking Soda
1 tsp. Baking Powder
1 tsp. Vanilla Extract
1 tsp. Banana Extract (or any other flavor you wish, there are tons)
1 tsp. Cinnamon
4 Egg Whites
1/4 - 1/2 C. Water (you may need more or less depending on the thickness)
1 C. Rolled Oats (not grounded)
Mix all ingredients except the Rolled Oats. Once you have a batter in the consistancy of cookie dough (or add more water and make muffins if you prefer) fold in the 1 cup Rolled Oats. Place batter in the fridge for 3 hours or more. Readjust consistancy with water if needed. Drop by the teaspoon on a cookie sheet. Bake at 8-10 min at 350 degrees.
