Some of the things that I took to school:

PB&J-- never got sick of it!
Soy turkey sandwich with sprouts, mustard, lettuce and tomato
And with my sandwiches, I would bring Sun Chips, and cut up veggies.
They have those soups at the grocery store that you can add hot water to it (If your school cafeteria serves coffee and tea, there is a hot water spigot attached to it)

I would always make a little more food at dinner time, and then I would just take the left overs and heat it in the microwave.

www.vegweb.com would also have some easy recipes for vegetarians. Hope this helps you out!

I like to cook a bunch of pasta and keep it in the fridge and then make different sauces for it. That way I can have noodle salad any time!

- pasta salad with balsamic pan cooked tofu, cucumber, avo, tomatoes, sundried tomatoes, feta or parmesan, balsamic, olive oil, basil, oregano, salt and pepper

If you have a microwave:
- veggie dogs with whatever toppings you like
- prewrapped burrito (beans and cheese) and then heated with a side of tomato, avo, sour cream and salsa. This requires lots of tuperwares but it's so good.

- cheese and tomato sandwich with potato chips on it.
-sandwich with tomato, cucumber, avo, feta and then drizzle balsamic and olive oil on right before you eat it or dip it
- a wrap: use whatever tortilla you want with a tofu spread, sprouts, tomato, avo, cucmber, oilive oil, hummus (optional), and sundried tomato, flavored cream chees or cheese spreads are good variations also.

-leftovers: lasange, enchiladas, baked ziti

you can make the enchiladas with minced and spiced tofu pan cooked and cheese inside with beans on the side and a side of spanish rice. Top it with canned enchilada sauce, medium the spicy is sooooo hot.

the ziti can be made with spinach, mushrooms, ricotta, and cheese, whatever noodle you like and baked in a casserole dish with cheese all over the top.

lasange is the same as the ziti except with lasange noodles.

Good luck.

Lunch is rough, because if you want something good, you have to plan. I end up skipping lunch way too much, but if you have to do that, I've found that eating a big bowl of cereal or granola with soymilk and banana for breakfast keeps me going. It's not lunch, but it's a way to keep going...
