Does anyone know how to make your own soy cheese? It seems like all the ones you can buy at the store have flavoring additives that I don't want -- or are there any out there that don't?

peace,
d

After reading your request I remembered that yes I do have a recipe at home.

Ingredients:

Agar flakes - 6 tbs (thickener from the sea)
Water - 3 cups
Tofu - 1 cup or half pound medium firmness
Cashews - 1/4 cup
Garlic powder - 1 tsp
Onion powder - 1 tsp
salt - 1/2 tsp or to taste
Juice of 1 lemon
nutritional yeast - 1/4 cup

Directions:

1)Boil the water in a medium-sized pot and add the agar flakes.
2)Simmer 5 minutes until the agar is dissolved and the liquid starts to thicken.
3)Put the remaining ingredients in a blender and puree. Add the agar thickened water and puree some more.
4)Taste and adjust flavoring...you may add more salt, lemon, garlic or to your liking.
5) Once its smooth pour the batter into a lightly oiled container and chill for approximately four hours.

I've purchased agar flakes through the internet.

Good luck and enjoy!
