first off, before i start my recipie, i would love to recommend a book for those of you out there who are struggeling in the 'meat-eating world'. Iv'e been veg for about forever and a day and love it. I do admit it was difficult to 'adjust' in this society, but reading this book helped me out emmensly. it's called "living among meat eaters" by Carol J. Adams. anyway, i'm not going to talk about the few ignorant people who have nothing to do but post nonsense about their diet....here goes a kick ass recipie!you'll need...
2 green bell pepers
1 red bell peper
8 oz. fresh mushrooms (extra if you like)
1 onion
6 tbs. oil (olive, veg, whatever works)
2 tbs. chili powder
salt and pepper to taste
all you do is slice up all of the peppers, onion, and mushrooms and put them in a bowl.
in a cup, mix the oil and chili powder.
then add the oil mix to the bowl w/ the veggies. (mix well)
heat up a large skillet or wok until hot then add the veggies and cook for no more than 5 min. or so.
here's a recipie for guacamole:
1-2 avacados
1/2 lime (or lime juice)
salt pepper to taste
1 tomato
mash the avodados in a bowl, chop the tomato, then mix in w/ avacado squeeze lime juice and add salt and pepper.
oh yeah, try to use organic veggies and tortillas (w/ no lard or animal derived stuff, soy cheese and soy sour cream.
