Pumpkin Chocolate Chip Muffins



Sounds like a strange combination but it is very good! The muffins come out nice and moist. Usually any recipe for a loaf bread (i.e. banana bread) will make a batch of 6 jumbo muffins.

1-1/2 cups flour
1 cup sugar
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. clove
1/4 tsp. allspice
1/4 tsp. salt
1 cup cooked canned pumpkin
1/2 cup butter melted
1 cup chocolate chips
2 eggs

Preheat the oven to 350 degrees. Grease or line muffin tins. Combine all the dry ingredients and set aside. In large bowl, beat eggs. Stir in pumpkin and melted butter. Blend well. Add dry ingredients, stirring until just moistened. Stir in chocolate chips. Spoon into muffin cups and bake about 20-25 minutes.

Ive actually experimented with a recipe very similar to this, I was desperate for something chocolate, so I threw some chocolate chips into a pumpkin bread mix and put it in a loaf pan. It turned out really yummy. My boyfriend and I ended up eating the whole thing that night, mmm, pumpkin, chocolate, mmmm....its a good combination. Thanks for reminding me, Kermit!! :)

Hey I made them over the weekend and they were yummy!!!
I watched my niece and nephew all weekend and they were a big hit, my son liked them too!!

That sounds really good. Have any of you ever had pumpkin chocolate ship cookies? it's pretty much the same idea, and just as good if not better.
