Kasha is one of my absolute favorite foods. If anyone else enjoys it, I got an amazing recipe from The New Farm Vegetarian Cookbook.
Ingredients
1 c kasha
mixed veggies, chopped small
1/2 c nutritional yeast
1/2 c flour
1/3 c olive oil
hot sauce, tamari, and poultry seasoning to taste
Kasha
Boil 2 cups of water
Add 1 cup kasha
Simmer over low heat for approx. 20 min, or untill Kasha is tender and the water is cooked off
Veggies
In another pot, simmer mixed veggies until tender.
For golden gravy
Toast 1/2 cup of flour in a frying pan until you can smell it (don't burn it!)
Add in 1/2 cup of nutritional yeast and toast for 30 second longer
Add in 1/3 cup of olive oil and stir well
Gradually add water (ususally 2 cups or a little more), stirring constantly, until all your mixture is a little runny
Add in a dash of hot sauce, tamari sauce, and poultry seasoning to taste
Keep stirring until mixture thickens.
Add veggies and golden gravy to kasha, stir to mix and enjoy!
Sorry for the inexact measures....I have cooked it so often that I don't remember the exact recipe anymore.
I know that it may sound like a lot of work but trust me! it is very easy and delicious.
