I'm looking for a comprehensive guide to different types of peppers commonly available in the US, with their relative flavors and levels of heat, and common uses. I really like peppers, but I'm always a bit leary of trying new ones for various dishes, because I've ruined things a few times in the past by getting them too spicy. Now, I like spicy food, but I'm not all that used to it and too much can send me over the top. I'd like to build up my tolerance a bit, but first I need to learn what peppers to use where, so I can get it right... Anybody have a good link for me? Thanks!

I always thought it was the pepper not the gardener that determined the heat of the pepper?
