I have this excellent recipe for making your own veggie burgers, 'cause I know how the store-bought can taste pretty gross. Let me know if you'd like to try it. (Either by reply or email; I would probably get email sooner)

Ingredients:

3 1/2 oz spinach
1 tbsp. olive oil
1 leek, chopped
2 garlic cloves, crushed
1 1/2 cups mushrooms, chopped
10 1/2 oz firm tofu, chopped
1 tsp. chilli powder
1 tsp. curry powder
1 tbsp. chopped cilantro (coriander)
1 1/2 cups whole wheat bread crumbs (better if fresh)

1. Cook spinach in a small amount of water for 2 minutes. Drain thoroughly and pat dry.

2. Heat oil in a frying pan and saute the leek and garlic for 2-3 minutes. Add the remaining ingredients except for the bread crumbs and cook for 5-7 minutes until the veggies have softened. Toss in the spinach and cook for 1 minute.

3. Transfer the mixture to a food processor (a blender works about as well if you don't own a food processor) and blend for 30 seconds until almost smooth. Stir in the bread crumbs, mixing well, and leave until cool enough to handle. Using floured hands, form the mixture into four equal-sized burgers. Leave for 30 minutes.


Sorry it took so long. I haven't had a chance to get near the computer in a month. Anyways, if you want, you can double or triple the amount of everything and freeze some for later.

Beef, Veal and Pork Burgers with Sauteed Peppers

Thick and juicy grilled beef, veal and pork burgers become company fare when served with colourful bell peppers on toasted whole grain bread.

3 pounds ground beef
1 1/2 pounds ground veal
1 ½ pounds ground pork
8 rashers unsmoked bacon, diced
1 large egg, lightly beaten
3 tablespoons finely chopped onion
1/2 teaspoon ground black pepper
3/4 teaspoon salt, divided use
1/2 cup red bell pepper strips
1/2 cup green bell pepper strips
1/2 cup yellow bell pepper strips
1 1/2 teaspoons vegetable oil
6 rolls or buns, toasted (optional)

Combine beef, veal, pork, bacon, egg, onion and pepper, mixing lightly but thoroughly. (Mixture will be very moist.) Shape into 6 patties, each about 1/2-inch thick. Arrange on rack of broiler pan.

Broil 4-inches from heat, 4 to 5 minutes per side or to desired doneness. Or place burgers on grid over medium coals and grill 10 to 12 minutes, turning once. Season with 1/2 teaspoon of the salt.

Meanwhile, cook bell pepper strips in oil in a medium nonstick skillet until tender. Stir in remaining ¼ teaspoon salt. Serve burgers on rolls or buns topped with peppers.

Makes 18 servings.
