This is the recipe that I use for pumpkin muffins!
PUMPKIN MUFFINS
3 1/3 c. flour
2 tsp. baking soda
3 c. sugar
1 1/2 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. ground ginger
Mix dry ingredients and add:
1 c. oil
4 eggs
2/3 c. water
2 c. pumpkin
Preheat oven to 350F degrees.
Prepare muffin tins by greasing with vegetable oil or butter and sprinkling lightly with flour. Shake out excess.
Fill muffin tins three-quarters full and bake at 350 degrees for 20-30 minutes or until toothpick inserted in center comes out clean.
Frost with cream cheese frosting!

these can be dangerous.... I mean seriously, how many pumpkin muffins can one person eat in one sitting before they weigh 800 lbs.
I can attest to being able to eat at least 3 before this happens! :-)

oh my god, pumpkin muffins!!!! yum yum. Will try that one out. I was saying earlier to someone that I could go for a muffin and a pumpkin one sounds delightful! ooh. i could seriously eat all of them (assuming one makes 12 regular, OR as i like to do, 6 gigantic ones). I'm a bottomless pit for good, tasty food. Wouldn't be able to tell by looking at me but...man, I'd even eat the batter. pumpkin batter soup... :hippie:

I think it is supposed to make 12. I just fill the tin until I am done. Usually get 10 or 11.
Make the 6 big ones. That sounds good too!

you gotta go w/ the big ones. then they're all gooey inside. i like mine pretty undone. cinnamon muffs are soooooo dank...ugggh. love them...going to throw some cinn. in my pumpkin muffs... A LOT.

i really need to GET UP and go make those. i'm still wanting them. think i'm making some soup today. kind of sucks being in limbo for a few weeks to do nothing. usually super productive and now i'm definitely being a slug. eh, i deserve a break.

slugs aren't half bad. I have seen Les Stroud eat them. I would enjoy the time off. Make the muffins... although the pancakes are better!

yummm pancakes are one of my favorite things alongside of the muffin. however, my pancakes have a certain addition that i know you wouldn't want. if we ever get together, i'll just make my kind for you and you can flip out. and love it. it'll be a pancake experience. for sure. you have to have the REAL maple syrup though. that halfassed garbage...eh, makes the pancakes a little less special.
