INGREDIENTS:
2 1/2 cups Barilla Plus Macaroni
6 tablespoon Light Butter
1/4 cup Flour
1 teaspoon Salt
1 teaspoon Sugar
1/2 teaspoon Pepper
2 cup 2% milk
8 ounce Velveeta Light cubed
1 1/3 cup Cottage cheese, Fat Free
2/3 cup Sour Cream, Reduced Fat
1 cup Cheddar Cheese, Reduced Fat
1 cup Mozzarella Cheese, Reduced Fat
20 crackers Ritz Crackers, Reduced Fat crushed
DIRECTIONS
Cook pasta according to package directions, drain, place in a 2 quart baking dish sprayed with non-stick spray.
In a saucepan, melt 4 T. butter. Stir in flour, salt, pepper and sugar until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened.
Reduce heat, stir in Velveeta until melted.
Blend sour cream and cottage cheese together in food processor until creamy, stir into mixture.
Pour over macaroni. Sprinkle with cheddar and mozzarella cheeses.
Melt remaining 2 T. butter and mix with crushed Ritz crackers; sprinkle over top.
Bake, uncovered, at 350 for 30 minutes or until golden brown.
