Hey, I'm looking for a good guacamole recipe.
My husband makes "Taco Dip" and we're inviting it's admirers over to indulge this weekend.
In case you're wondering, taco dip involves:
2 cans reaf fried beans (we use veggie because they're lower in fat.)
2 bags boca meat (not so oily, and in our opinion, tastier in this context than real meat)
2 small containers of sour cream
2 bags shreaded monterey jack cheese
cumin to taste
2 tomatoes, seeded
Cilantro
Directions:
Cook the boca meat and mix with cumin
In large casserole dish or metal roasting pan, layer beans, meat, sour cream and cheese
Bake at 425 for 30 minutes
Chop tomatoes and cilantro finely and spread on top
Enjoy with chips.
It doesn't sound like much... but we have people asking to have it when they come over... it's goooooooooooooooooooooooooooooooooood!

Here is a delicious guacamole recipe:
2 tbs juice of lemon or lime
2 med. avacadoes
1-2 med cloves garlic, minced
1/2 tsp salt
fresh cilantro
1/2 tsp cumin
1/2 tsp chili powder
small tomato, diced
2-3 tbs mayo
black pepper and cayenne to taste
optional:tiny amts of gr. and red pepper, peeled and seeded or finely minced cucumber
1. add lemon or lime in bowl
2. add avacado, mash
3. stir in rest, cover and chill
keep pits in to keep it green:)

I keep it simple.
lime juice
avocados
cilantro
tomato
salt & pepper to taste
Then follow steps 1, 2, 3 above

My sister lived in Mexico for a year, and this is how her "mom" made guacamole.
2 ripe avacados
cilantro
white onion
1 jalapeno
1 clove of garlic
1 lime
peel and mash the avacado. chop the cilantro, onion, garlic and jalapeno (use whole or half depending on how spicy you want it). mix everything together then cut the lime in half and squeeze it over the guacamole. stir again and taste before adding the other half of the lime.
this is great with chips but I especially love it on BLTs instead of mayo. just gives it a great kick.

Well, today is the Guacamole day. Wish me luck.
I am going to try Nappy's recipe first (minus the mayo, because I think mayo tastes like some sort of high school home-ec experiment goine terribly awry.) I was thinking about subbing it with sour cream, but I'm going to try just leaving it out first.

...i was thinkin of doin this today too:) Perhaps along with your taco dip & pita chips...mmm....
...may i suggest starting with wyldflower's idea...and keep it simple at first with the basic ingredients...then taste test...and experiment with the spices...
1/2 tsp cumin
1/2 tsp chili powder
b/c they do add a bit of a kick that may or may not be necessary :D

Okay, it's done and it's DELICIOUS! (I, of course, had to do a little taste test before everyone gets here.)
Here's what I did:
I used 4 ripe avocados
1 tbsp lime juice
1 medium sized tomato (seeded and chopped small)
1/4 cup white onion, minced
1 tsp minced garlic
1/2 tsp cumin
1/2 tsp chili powder
and lots of chopped, fresh cilantro
a splash of salt
A sprinkle of black pepper
and then I cut up a little bit of cilantro and sprinkled it on top
I also left the pits in to keep it green. Why does this work?
Ummmmmmmmmmmmmmmmmmm... it's good. It's really, really good.

i have no idea...but i know without them you'll have brown guacamole in 15 mins!!!
