if you liked the banana bread recipe, try this one...
Ingredient List:
1/4 cup soft butter
2/3 cup white sugar
1 egg
1/4 cup sour cream
2 large apples, chopped (fine)
1-3/4 cup flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 cup pecans,chopped fine (may also use walnuts)
Instructions:
Step 1: Preheat oven to 350 degrees.
Step 2: Grease and flour a 9" x 5" loaf pan.
Step 3: In a medium bowl, mix together the butter and sugar.
Step 4: Add the egg, sour cream and grated apples.
Step 5: In a separate bowl, sift together the flour, baking soda, baking powder and cinnamon.
Step 6: Add the dry mixture to the wet mixture, stirring well.
Step 7: Stir in the finely chopped pecans.
Step 8: Bake the bread for 50-60 minutes until a toothpick inserted comes out clean.
When I am done with this I let the bread sit in the pan for 15 minutes on a wire rack before removing it. I then let it sit out of the pan on the rack for 1/2-1 hour until it is completely cool. Then wrap it in tin foil and let it sit at room temperature (your counter) overnight to let the flavors settle and to make it easier to cut.
