No one's posted here, yet, so I guess I'll start. I made a really good, hearty lentil soup the other day. Here's the recipe. Anyone else have favorite warming, filling winter soups?
Saute onion, carrots, celery, finely chopped mushrooms, garlic, bay leaf, thyme, parsley (herbs of your choosing) in a few tablespoons of olive oil.
When they start to smell really mouth-watering, add a teaspoon of mustard, a few drops of sherry vinegar or cider vinegar, and a pinch of sugar. Cook for a few more minutes.
Add a mizture of grains, about a half cup total -- rice, barley,bulgar, whatever -- and coat with the vegetable/oil/herbs.
Add about a cup of dried lentils and a 15 oz. can of crushed tomatoes.
Keep stirring and add water to cover, but not too much or the soup will be watery. You may have to add more water as it's cooking.
Simmer for about an hour and a half. Add salt and pepper. Put about half of the soup through a blender for texture and mix everything back together.
Very yummy, vegan, hearty, filling.
