okay, so I just had the BEST cucumbers in the world, I have had the recipe forever and finally had some cucumbers about to go bad, but it rocked....I used a pound of cucumbers, 1 cup water, 1/2 cup rice vinegar and 1/2 cup sugar. Put the water vinegar and sugar in a saucepan and boil until sugar dissolves, slice cucumbers thin and put in a bowl, pour the contents of the saucepan over the cucumbers, covered and left overnight....my boyfriend HATES cucumbers and loved these, and I am now officially addicted....

I love cuc's and that sounds good!
Do you like horseradish I have an awesome recipe for horseradish pickles that I love and so does everyone when I make them! let me know if ya do I'll dig out the recipe.

i love both things here:) ...horseradish is great, especially when its freshly shreaded, very tasty...and hot!!!

I am experimenting with cucumbers, since i ate this cucumber thing at PF Chang's...this one is better than the first one and as close as i have gotten to PF CHang's cucumber appetizer....when you have drained the sauce that they are marinating in, try to pour some of the sauce over brown rice and it is really good!
Asian Cucumber and Sesame Salad
Makes 4 servings
1 English cucumber
2 Tbsp. sesame seeds, toasted
3 Tbsp. soy sauce
4 tsp. mirin
2 tsp. rice vinegar
1 tsp. sugar
Cut the cucumber lengthwise into 1/4-inch pieces, cut each piece in half, then cut the halves lengthwise into thin strips. Place them into a bowl and set aside. Place the soy sauce, mirin, rice vinegar, and sugar into a small container with a secure lid. Put the lid on and shake to create the vinaigrette dressing. Pour the vinaigrette over the cucumber, toss to coat, cover, and marinate for 1 hour, stirring once or twice. Just before serving, sprinkle the toasted sesame seeds on top.

That cucumber recipe is definitely good- I have a Thai cook book that has it in there and I used to take just a huge thing of those to work for lunch. Its funny cuz the people there would be like "Is that all your eating-cucumbers?!?" but after they tried them they were hooked :)
