I'm beginning to think you can talk politics about food until you just plain lose your appetite. Personally, I would wish that on no one...
So, what is your favorite vegetable? And how do you most like to prepare it?
Mine changes from time to time. Right now, it's chard. Green, red, rainbow--they're all good.
An easy way to prepare? Take a big bunch, chop it up relatively finely (stems and all), and saute in olive oil with pine nuts, raisins, salt, and pepper just until it begins to soften.
Eat consciously, but eat well.

Favorite vegetable by far is the sweet potato!!
A favorite preparation is cutting them into little 1"x1" or 2"x2" pieces, putting some butter (or butter subst.) on them, with salt, baking them for as long as it takes for them to start burning... they get a real nice sweet and carmelized taste to them :D
and ofcourse sweet potato fries are always a favorite as well :)
goood thread wyldflower! i definately agree that it's possible to talk yourself sick with food politics... a lot of people just don't get that what you put in your body has such an immense impact on your entire life. You eat well, and you'll be well.. health begins in the soil.

I just love fresh asparagus right out of the garden. I pick it and snap off the tough ends.
Easy way to prepare it? I cut it into about four inch long sections, put it in a skillet with maybe 1/4 cup of water and a little butter. Put the lid on it. When I see steam coming out from under the lid, I turn off the heat and let the pan sit for five minutes or so.
Yum.....

Sliced tomatoes with a little olive oil and balsamic vinegar. You can add sliced, fresh mozzarella to that if you really want to get fancy!
