What a horrible experience, but one I bet your glad you had. Ive seen it too and it changes you for sure.

What are some of your fav veggie recipes? And what subsitutes do you use? I love quorn products, they are the best meatless products there burger is awesome!

We eat lots of tofu (plain), tofu products (quorn, st yves, and breegan likes the morningstar corn dogs and sausage)

Also, I make lots of dinners w/ beans/lentils/bulgurwheat/quinoa/coucous/barley/wildrices.

Since it's cooler now, I make lots of soups w/ beans/grains and then throw in some diced tofu sausage for more protein/flavor and then we use lots of veggies from our weekly CSA box (which I am totally loving!!)

I don't have too many recipes per se. I just throw a bunch of things in w/ spices and it usually comes out great.

I will write some down next time..may make one this afternoon!

Thats totally how I cook too, it usually ends up being good! We eat alot of plain old steamed veggies. I still cant like tofu much, maybe Im doing it wrong or getting the wrong kinds, just cant get to like it. Gotta keep trying it I suppose..
