Default curry recipes

ok, ok,...i'll bite on this one!
This was suggested elsewhere and I love curry recipes alot
Here is a simple curry lentil recipe ( it was posted in the last forum...but oh well!)

1 can (16oz) lentils
1 (20oz) can diced tomatoes
20 oz water
2 tsp olive oil
1 onion
1 zuchini(small)
3 garlic cloves
1 green pepper
1 red pepper
1 jalapeno pepper
1 tsp cumin seeds
1 tsp corinader seed (crushed)
1 tsp turmeric
2 tsp curry powder
2 tsp garam masala
2 tsp tomato paste
salt to taste (~1/2 tsp)
cilantro chopped

1) Boil lentils with water and turmeric for 30 minutes. Place in large cooking pot and add tomatoes and salt.
2) In a fry pan on medium, heat oil and add cumin and coriander seed until fragrant.
3) Add chopped onion and cook for 4 minutes. Then add garlic, peppers, zuchini and cook for 5 minutes.
4) Start simmering lentil mixture and add tomato paste, curry and masala. Add onion mixture and simmer for 20 minutes.
5) Top with fresh cilantro and serve over rice.

i guess im the only loser that likes curries around here

I should have called this thread "Reasons why people hate curries!!!"
...or disguised it as a thread called..."Bigger is better!!!" or something - i know toman would have looked

I saw the recipe but for some reason didn't say anything

I like curry and yes, it's good for you. Nice and spicy, wakes up vegetables, and promotes clear sinuses.

I put the powdered stuff in my fish coating and it adds that needed zing
Goes good in tomato juice.

...i didn't wanna sound like i was promoting my own recipe...but just to see what else other people are eating.....ummm....curry-wise!

mmm...curried fish sounds great I've tried curried shrimp which is really tasty too!

Default What would we do without curry?

Spinach and lentil curry:

Brown an onion, a clove or two of garlic, and one little red chili in oil or butter. Add a teaspoon of curry, one cup dried red lentils, and 3 cups water. Cover and simmer about 20-30 minutes until the water is absorbed and the lentils are falling apart soft.

While the lentils are cooking, chop up one large bunch of spinach. Saute in a little oil or butter until it starts to turn bright green. Set aside.

When the lentils are done, add the spinach and salt and pepper to taste.

Eat with rice.

I always get hungry looking at the recipes around here

this is a little redundant, but I made cous cous over a year ago & I cant remember if we used curry or cumin or something totally different. Can cous cous made w/ curry?

ok...well i don't have a recipe for you, but i bought some couscous at a restaurant last week. It was named "Morroccan Curried Couscous". Being a curry lover i isolated the ingredients to these:
Couscous, cumin powder, mild curry powder, onions, garlic, carrots,green pepper and raisins. The dish was topped with plain yogurt.
If i find a recipe i will gladly post it for you

I have to confess a weakness for curry that uses coconut milk as a base...I know, so bad for me but it adds SUCH a nice, mellow flavor....

I tend to "wing" it making curries...mostly I saute some curry powder, cayenne pepper, and the veggies I want to use...typically onions, mushrooms, stuff like that. Then I add a couple tablespoons of flour to help it thicken up and I add about half a can of coconut milk...

I like this over rice..... YUM!

Coconut milk is awesome in curries. In my spinach lentil curry recipe above, leave out the spinach and add a half can of coconut milk at the end. Also, to spark it up a little, saute a shallot, a pinch of red pepper flakes, a teaspoon of mustard seed, and a bay leaf for a few minutes and add at the end to the lentils. Yum!
