oh my, that sounds so good!!!!!! never had em that way, but now i am going to have to try it! (apples and onions are good like that too)

but the only way i ever get sweet potatoes is in my mom's pie. the hubby refuses to eat them, not even in my mom's fantastic pies, so i don't buy them. ornery man never eats anything! hopefully my daughter will like vegetables as much as me, so we can eat more of them in my house than we currently do. (sorry, no vegetarians here )

Motherinlaw tells me that steaming instead of boiling is very good. then mash or bake or candy.

Kathy's Best Ever Sweet Potatoes

No substitutions...this recipe is from Cooks Illustrated magazine which tests hundreds of possible ways to prepare a food and chooses the best overall by taste tests...and there's very specific reasons for each ingredient chosen.

4 tablespoons butter, cut into four pieces
2 tablespoons heavy cream
1 teaspoon sugar (no, that's not a misprint)
2 pounds sweet potatoes (about two large or three medium-small potatoes), peeled, quartered lengthwise, and cut crosswise into 1/4 inch slices
Pinch ground black pepper

1. Combine butter, cream, sugar, and sweet potatoes in a 3 to 4 quart saucepan; cook, covered, over low heat, stirring occasionally, until potatoes fall apart when poked with a fork, about 35 to 45 minutes.

2. Off heat, mash sweet potatoes in saucepan with potato masher or transfer mixture to hopper of food mill and process into warmed serving bowl. Stir in pepper; serve immediately.

Variation: Maple-Orange mashed sweet potatoes:

Stir in two tablespoons maple syrup and 1/2 teaspoon grated orange zest along with the black pepper.

I like to cook Yams rösti styley

Take some Yams and Potatoes, peel and grate them. Place in a tea towel and squeeze out as much liquid as you possibly can. Add some sliced Onion and mix really well. Shape into round, flat patties and fry in a little oil for about 6 mins each side.

ENJOY!!
