Default veggie lasagna

Hey,
Im not a big lasagna fan (takes time, prep work etc) but it is fun to make sometimes. This one is very tasty!

VEGETABLE LASAGNA

2 tbsp butter 30 ml
2 tbsp all-purpose flour 30 ml
2 cups milk 500 ml
1 tsp salt 5 ml
1 tsp pepper 5 ml
1 tsp nutmeg 5 ml
3 cups grated mozzarella cheese, divided 750 ml
1 lb lasagna noodles, cooked or oven ready 500 g
3 tomatoes, thinly sliced 3
1 zucchini, thinly sliced 1
1 onion, thinly sliced 1
4 cloves garlic, chopped 4
1/4 cup fresh basil 50 ml
1 tsp dried oregano 5 ml
1 bunch spinach, stems cut off 1
1/4 cup grated parmesan cheese 50 ml

Preheat oven to 350NF

Melt the butter in a saucepan over medium heat. Add the flour and stir until you have a paste.Gradually add the milk, stirring constantly so that no lumps form.Add the salt, pepper and nutmeg and bring to a boil, stirring constantly, until the sauce thickens slightly. Remove from heat.Stir in 1 cup of the Mozzarella cheese.

Pour a small amount of the sauce into a 13" x 9" baking dish. Cover with a layer of lasagna noodles then half of each of the tomatoes, zucchini and onion slices. Sprinkle with half of the garlic, basil and oregano mixture.

Place a layer of noodles over the top, spread a small amount of sauce on the noodles, sprinkle with 1 cup of Mozzarella cheese and ½ of the spinach. Press down well. Repeat alternate layers exactly the same as above, topping the final layer of spinach with noodles.

Spread with remaining sauce and sprinkle with Mozzarella. Dust with the Parmesan cheese, cover with foil and bake for 45 min. Remove the foil , bake for another 15 min. Let sit for 10 min. before serving.
