More Tofu Recipes Than You Can Shake A Stick At

Warning, Warning, these tofu recipes actually taste great

SPINACH-TOFU BALLS [EGG AND DAIRY FREE]

This isn’t your ordinary spinach ball-it’s spiced up and packed with
protein.

1 10-oz package frozen chopped spinach, thawed and drained
1 cup tofu, crumbled
1/4 cup gluten flour
1/2 cup soft breadcrumbs
4 cloves garlic, minced
1/2 teaspoon onion powder

Combine the gluten flour with the breadcrumbs. Next, add the garlic
and onion powder. Mix well. Now add in the spinach followed by the
tofu. Spoon teaspoon-sized balls onto a nonstick cookie sheet. If the
mixture is hard to work with, add a few tablespoons of water. Bake for
35 minutes at 350 degrees.

 

TOFU CASSEROLE

2 cups whole wheat macaroni
1 cup crumbled soft tofu
2/3 cups soymilk
2/3 cups cooked peas and carrots (frozen veggies are okay)
1 cup grated tofu cheese (or Monterey Jack cheese)
1 small tomato, cut into little cubes
1/3 red onion, thinly sliced
2 tablespoons butter or butter substitute
Seasoned salt to taste

Cook the pasta in a large saucepan and drain well. Mix all the
remaining ingredients together and then combine with the pasta. Pour
into a well-greased casserole dish. Bake at 350 degrees (Fahrenheit)
for 40-45 minutes or until pasta is lightly brown on top.

Chili Con Hippie Tofu
Serves 8

Saute in 2-3 tbs. oil
1 Medium onion, chopped
2 cloves garlic, minced
Add 2 cans (16 oz each) tomatoes, broken up
3.5 cups cooked kidney beans (or mix some black beans.)
1.25 cups bean liquor (or water)
2 tsp.vege bouillon
2 tsp. chili powder(or more to taste)
1/2 tsp cumin
3/4 tsp. salt
1 bay leaf
1 tsp honey
2 lbs. frozen tofu, thawed, rinsed, squeezed dry and crumbled.

Bring to a boil, reduce heat, and simmer, covered for 1 hour.

Tofu Pancakes – Tasty, firm, yet oh so moist and yummy!

You must prepare these in your pajamas.
Get our your blender (and make sure all the strawberry margarita mix is completely washed off from last night).
Blend the following ingredients until smooth:
1 1/2 cups of milk
3 eggs
1 lb soft tofu
1 tsp. – 1 tbs. oil
2 tbls. honey
1 tsp. baking powder
1 tsp. vanilla
1/4 tsp. salt
Add 1 cup of whole wheat flour and blend again.
Bake on a lightly oiled, medium heat grill.
Top w/ your favorite syrups or fresh fruit – enjoy! :)

TOFU WITH GARBANZO BEANS (EGG AND DAIRY FREE)

Nothing fancy today–just a tasty dish that combines two great sources
of protein: beans and tofu.

2 cans garbanzo beans, drained
1 10-ounce package tofu, cubed or crumbled
1 16-ounce can whole tomatoes
1/2 teaspoon cinnamon
3 cloves garlic, crushed
1 onion, chopped
4 tablespoons of barbecue sauce

In a saucepan, heat the onions, garlic, and barbecue sauce. Next, add
the tomatoes. Stir constantly, making sure to mash the tomatoes
against the side of the pan. Finally, add the beans, cinnamon, and
tofu. Heat thoroughly before serving.
